Beets and collards are now ready! I pack the beets, trimmed and bagged in the fridge. Whole collard leaves, rib meat included, are also packed in the fridge. I still have lettuce mixes. Try my new lemon dill lettuce mix, a combination of my regular mix with wild mountain sorrel and dill added. Just soak the lettuce in cold water for 1 or 2 hours, rinse well, dry off and store in fridge. It should last a week. This lemon dill salad is great with just a little apple cider vinegar and olive oil. The sorrel has a lemon taste, and the dill adds to this unique salad. Off course, I still carry the spicy lettuce mix and the regular lettuce mix. Collards! I cook this wonderful leafy vegetable by separating the leaves from the rib meat. I then cut, boil in water and drain them. Afterwards, I fry the leaves in olive oil with garlic and a little butter. Other recipes I have tried incorporate bacon. smoked pork, hocks or ham. I prefer not to use these meats. This veggie will clean you out. Beets, some people like them boiled and eaten plain. I, myself, like them pickled. I boil them, and then add vinegar, honey and a clove to taste. It's Good cold.

Lettuce mixes are in the fridge. regular and the spicy mix, The spicy mix has arugula and garlic mustard leaves added. Also available is fresh dill and fresh oregano. store these in plastic bag in the fridge. will keep for up to 2 weeks or you can dry for future use. Hang upside down in a dry dark place till dry, crumble up and store in air tight jar. I am out of asparagus for this year. The garden looks good. Radishes were a flop though. Soon I will have rutabaga, kohlrabi, turnips and beets. That is if I can keep the deer from eating them. I have just planted some red ruby queen sweet corn. Yes a red sweet corn. I will still have the bi-color corn but this new red corn will be a interesting addition to all the other veggies. Also new for this year and soon to harvest will be a Red Romaine lettuce. I will have asparagus, Rhubarb, and an assortment of condiments, hot sauces, salad dressing, pickled garlic, and of course my famous Gardinere. Fri Sat and Sun open 10 to whenever. You know the routine.....

I cant keep up on the asparagus and rhubarb. Very popular. Any way its hit or miss. If I do not have any one day check again the next. Also I am going to sell USDA. certified Organic Brown eggs soon. I have found an Amish supplier and will be getting some in a month. I need egg boxes. No stryfoam, only paper. So if you have some or if you would save them for me I would appreciate it. Just leave them at the stand with your name on it so I know who gave them to me. We are remodeling a new and improved farmstand. Soon to open ! 1 month. I will let all you know. OK Guys, the asparagus is in! You know the routine. It is in the serve yourself stand. Put money in metal box on wall. Make sure you have the correct amount of money $4.00 a bunch,. since I will not be there to give you change. I will be busy planting all your future vegies. .Audi and Ed

I will have today, Sunday, Rhubarb, and Asparagus till 5. I still have some heirloom tomato and pepper plants for sale. I sold a lot this Sat and Sun. This was a trial thing and it was very successful. So I am going to construct a large growing house for next years plants.

WOW!!!!! I couldn't believe my eyes! Whole foods is selling organic asparagus for $5.99 Lb.
My certified naturally grown asparagus is just $4.00 a lb.
I will have some this Friday-Saturday-Sunday, along with rhubarb. And that's not all.
I have a heirloom pepper and tomato plant sale also on those days!!!! These are good size plants ready to plant, My organic heirloom tomatoes and pepper plants are as follows; Tomatoes Sunray-Flamingo-Chocolate and purple Cherokee purple-carbon-crnkovic-celebrity-goliath-Japanese trifle-lemon boy-great white-rev. Mormons-Il beauty-Mortgage lifter-Abraham Lincoln and Rose. Peppers are; Gold marconi- Orange bell- DouxD'Espanada- Quadrato D'Asti Giallo- Corno Nodi Toro Giallo- Santa fee Grandes- Thai yellow and sweet spots. There will be descriptions on these pepper and tomato plants. if you know of anyone interested in purchasing these plants then send them over. This Friday, Sat and Sunday from 9 till 5. This will be a one time event and I have a limited amount of the organic plants for sale.

I have been getting a lot of questions in regard to smelly urine after eating asparagus. Asparagus contains a sulfur compound called mercaptan. It is also found in onions, garlic, rotten eggs, and in the secretions of skunks. The signature smell occurs when this substance is broken down in your digestive system. Not all people have the gene for the enzyme that breaks down mercaptan, so some of you can eat all the asparagus you want without stinking up the place. One study published in the British Journal of Clinical Pharmacology found that only 46 percent of British people tested produced the odor while 100 percent of French people tested did. My asparagus is organic so your smelly pee is organic.

Hi Everyone It has been a long cold winter and spring so far. Things are running a little late. I have sown Lettuce, radishes and spinach. The asparagus should be poking its heads up in a few weeks. Cant Wait! I have added much more new varieties of Heirloom tomatoes and peppers. Also a lot more hot peppers. Something new for this year are as follows; Collards, Sweet potatoes [early fall], 2 types of turnips, 4 types of eggplant, Pea pods, How about a heirloom white tomato! 5 varieties of carrots. More watermelons. More organic salad dressings and jellies. Hot sauces. Pickles. Salsa. Dips. Honey. Oh Yes our Honey. We sold out of honey last year and will try to supply more for this year. Honey should be ready to sell middle of summer. Our web site audisacres.com will give you a better idea of what we are offering in detail for 2008. But please wait a week or two to access it. I am thinking of holding a customer appreciation day sometime in summer. This will be on a warm day and will have a lot of food to sample from our garden, along with an educational tour showing the garden that supplies you with our vegetables.
